Avocado Toast Recipe:
Ingredients:
1 fully ripened Avocado from Mexico, halved pitted and peeled 
salt
ground black pepper
2 large slices of bread, toasted
Optional: 2 slices of bacon, cooked and halved or 2 tablespoons chopped tomato
Preparation:
In a bowl, coarsely mash avocado with a fork; season with salt and pepper to taste.  Divide avocado onto toast and spread to cover; cut each slice in half. If desired, tuck a piece of bacon into avocado on each toast half or slice tomato over top and serve.

Why I love Avocados

I love avocados because I feel like they are one of those foods that taste so good, I should feel guilty eating them, but I don't.  Fact is my doctor encourages me to eat avocados daily to level out my blood sugar and take in healthy fat, plus they are green, and my kids think that is pretty cool.  There are so many creative ways you can use avocados, for example our  guacamole tree and Grinch from December (pictured below).
 
At I love avocados on Facebook, you can download ringtones, blog badges, wallpaper/screensaver, or send a virtual gift.  I sent my guacamole loving hubby a virtual bag of avocados and love note;)  It was easy to do, the site will walk you through with step by step directions.  It only took a few seconds to send a virtual gift. Avocado Grinch and GuacamoleTree Dip



My son decided he really wanted to enter the cooking contest I shared with you all last week, sponsored by Avocados from Mexico.  Check out that post here for more info on the contest.
We had a lot of fun with our avocados, and came up with a cool holiday inspired guacamole tree and Grinch.  If you would like to try this kid friendly recipe, then check out my son's wonderful 3 minute video below sharing his recipe for the tree. The Grinch is made out of an avocado, (peal for the Grinch's collar), tomato, yellow bell pepper, celery leaves, and black olives.
